Before marriage, my dinners consisted mostly of items off of value menus from any fast food restaurant within a mile radius of my house, or on my way home from work. Sad, I know! But in the last seven months, I'm proud to say we haven't had fast food for dinner once! Granted, moving to a remote island where fast-anything doesn't exist has had a lot to do with that, but still! :) I've been forced to get creative in the kitchen, and luckily I've been blessed with a husband who isn't picky and who, if I starve him long enough, will eat anything I make!
Hands down, the biggest question I face every day is "WHAT'S FOR DINNER??" I feel like it haunts me all day long, from the minute my eyes pop open in the morning! Some days inspiration hits early and I can enjoy my day because I already know what we're going to eat that night, and I actually look forward to making it. Other days (like today) inspiration takes it's sweet time showing up!
We eat a lot of chicken, so I try really hard to mix things up a few nights out of the week and fix something that's, well, not chicken. Today I kept having all these dinner ideas for tonight - chicken enchiladas, chicken and rice, teriyaki chicken, chicken tacos, etc... But each new idea was met with the thought, "We've had chicken the last two nights. Change it up, no chicken tonight!" Finally this evening I decided on little pizzas... they'd be super fast, super easy, and pizza sounded good, and it's not chicken! :)
The very first thing I did when I got to the kitchen was this...
You know the feeling when you want to laugh and cry and say a bad word all at the same time? All I could think was, "Dangit! Now what am I going to make for dinner??" There I was... glass everywhere, pizza sauce on my feet, up my legs, all over the fridge and cupboards, and back to square one with dinner.
If we were back in the States, tonight would have been a perfect night to hit up the Wendy's value menu. Instead, we had chicken!
Oh sad! I know how you feel though. I never know what to make for dinner. We did have pizza this week, but it was from the shop down the street. We've had a lot of rice lately... and soup.
