We got the coolest care package in the mail this week! In it were the ingredients to make red enchilada sauce that we can't get down here, like chili powder and el pato sauce, plus a big bag of masa harina to make corn tortillas!
We're in heaven!! I made my first batch of sauce the day after we got the box, and so far this week we've had burritos enchilada style, nachos smothered in enchilada sauce, quesadillas and enchilada sauce... you get the idea. :)
This afternoon I pulled out the tortilla press Grandma Crockett gave us for Christmas and made a batch of corn tortillas. Nothing makes me feel less Mexican than trying to make tortillas, of any kind! But these didn't turn out half bad, for a first try!
And for dinner tonight.... you guessed it... ENCHILADAS!!
